No Guilt Dark Chocolate Pudding
Healthy, delicious and easy what’s not to like. This dark chocolate pudding is vegan and gluten free. Plus there is no cooking involved! It’s rich, creamy and naturally sweetened.
For thickening it uses chia seeds which are high in omega-3’s and are an excellent source of protein, dietary fiber and antioxidants. They have been used for centuries for their valuable nutritional properties. Chia seeds were used by ancient Mayan, Inca and Aztec societies for energy and endurance.
Ingredients
3 cups unsweetened almond milk
2/3 cup chia seeds
½ cup Hershey’s Special Dark unsweetened cocoa power
8 oz. Chopped dates
1/4 tsp ground cinnamon
½ tsp Himalayan pink salt
1 tsp vanilla extract
Instructions
Add all the ingredients to a mixing bowl. Blend with a hand blender until smooth. Transfer to a sealable container, cover and refrigerate for at least 5 hours or overnight.
Just add everything into you mixing bowl
Okay this is where you can vary things up a little if you like. If you blend things now the seeds will stay crunchy. This is the way that I prefer it. Or you can refrigerate now and blend later. That will give you a smoother pudding. It's totally up you!
Transfer to a container and refrigerate overnight.
Serve chilled with your favorite toppings like fruit, nuts, granola, or whipped cream.
Okay! You got me here. I'm not vegan so I used real whipped cream, but if you are you can use whipped coconut cream or whatever else you like.
The pudding will keep well in the refrigerator for a couple of days. So you don't have to worry about eating it all at once. It's pretty filling!
You can also get creative with the ingredients, if you like, as long as you keep the ratio of liquid to chia seeds the same. Try using coconut milk, or half cold coffee and half almond milk. You can also substitute your favorite sweetener for the dates if you prefer. Have fun with it.
