What do I serve for dinner, when the hubby tries to eat low carb, no fat and no sugar? A beautiful huge plate of green leaves, fresh vegetables and steamfried asparagus topped with some crispy smoakey tofu.
These are the main ingredients for the salad: lettuce, rucola and asparagus. To make it more colorful and diverse I also added some tomatoes, cucumber, radishes and green olives.
Smoked tofu is one of my favorite sorts of tofu. I use it on salads, for cooking or just on bread with a little bit of mustard.Β
I heated a pan with just a few drops of high olaic oil. (It was so little it was almost almost invisible. π I just wanted to avoid to burn the tofu.)
I fried the tofu slices carefully and slowly from both sides until crispy and seasoned with fresh ground pepper and with only a dash of salt because the smoked tofu was salty already.
The asparagus was so small and tender so I didn't need to peel it. I just put it in the hot pan and "fried" it sith a little bit of water instead of oil. I seasoned also with just some salt and pepper.
For a delicious dressing without oilΒ I took some soyghurt (without additional sugar), mustard, sea salt, fresh lemon juice, fresh ground multicolored pepper and some fresh parsley and leekΒ
I mixed all the ingredients and the chopped herbs for this delicious high in protein but low in fat dressingΒ
Because I love and need my carbs to not loose weight accidentally and because I love potatoes so much I cooked myself a whole pot of them to accompany my salad.Β
