It is a glorious day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our full time volunteers today on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!
Today we made a sweet spread with fried chicken, garden salad, spiced squash, cinnamony sweet potatoes, and homemade kimchi!
We love to eat bright colors all year, but in the wintertime it is especially important to get plenty of vitamins, minerals, and phytonutrients in the body to stay healthy and strong. Today's feast was quite colorful, a great indicator of the wealth of nutritional value in our meal. AND of course all the food is sustainable!
For our daily salad, we laid a bed of dark green curly kale and topped it with red onions, grated carrots, orange bell peppers, crunchy cucumbers, crisp cauliflower, and sliced mushrooms.
We made a platter of hot fried chicken for our meat eaters. We offer plenty of sustainable options for all dietary preferences, and anyone is free to eat or not eat meat on any day as they feel is best for themselves!
We made a delicious pot of sliced, steamed sweet potatoes sprinkled with nutmeg, cinnamon, allspice, and cloves. It was very flavorful, and you can see from the deep orange color that this dish is bursting with beta carotene! This is a pigment that turns into vitamin A in the body. Yummy and healthy!
For another side dish, we steamed acorn squash and mashed it with onions, mushrooms, and zucchini squash, and stirred in turmeric, paprika, some coconut oil, curry powder, and just a touch more cinnamon.
We served a bright cabbage kimchi on the side. This is one of our favorite ferments, and it is super beneficial for health! Fermented foods - if prepared properly - have lots of beneficial microbes that greatly enhance gut health. This is a slightly spicy, sour dish that we use as a garnish to add a nice pop of flavor.
For those of us who like dairy, we added a crumble of goat cheese and a sprinkling of crunchy pecans to our sweet potatoes for extra tang and texture! We offer these little touches so people are able to fully customize their meals, add depths of flavor, or keep things nice and simple per their unique tastes and preferences.
Another wonderful sustainable, FREE feast with more than enough food for everyone!
Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food!
We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
