Definitivamente, la pastelería está llena de muchos sabores, texturas y mucha azúcar. Comer un buen pastel, un pie o galletas, hacen mejor la vida, nos hace más felices o por lo menos a mi si. "En la grasa está el sabor" es una frase que se escucha mucho y aunque antes la utilizaba para hacer muchas bromas, me he dado cuenta de la realidad que tiene esa frase.
Definitely, pastry is full of many flavors, textures and lots of sugar. Eating a good cake, pie or cookies, makes life better, makes us happier or at least it does for me. "The Flavor Is In The Fat" is a phrase that you hear a lot and although I used to use it to make many jokes, I have realized the reality of that phrase.
No me imagino un brownie sin la grasa que aporta la margarina, el chocolate bitter y las nueces y si, es cierto que hay otras preparaciones que llaman brownie que son saludables y que no usan grasa, pero basta de la mentira, un brownie tiene grasa, así surgió este accidente de cocina que ahora parece ser la 9na maravilla del mundo y digo 9na porque el chocolate es la 8va. He aprendido que hay que aprender a respetar las recetas tradicionales y algún ingrediente no lo puedes consumir, entonces modificas, pero no lo sigues llamando por su nombre tradicional, las cosas como son.

Esto me hace saltar a las cremas de mantequilla, sea la versión americana, de chocolate o la que sea. Es común escuchar a las personas decir que eso no lo comen porque es pura grasa, que su cuerpo no puede comer tanta grasa, pero basta que le pongas un cupcake o un pedazo de pastel con crema de mantequilla y se la comen toda y no me digan que no, porque lo he visto y yo también entro en ese grupo jajaja.

Ha sido toda una aventura estudiar pastelería, aunque toda mi vida me ha gustado hornear y cocinar cosas dulces, no te das cuenta de los errores que cometes hasta que comienzas a ponerle seriedad al asunto. Aunque he estudiado muchas cosas por mi cuenta, el moldear esos conocimientos y llevarlos por el camino correcto, ha sido la mejor decisión que he tomado.
It has been quite an adventure to study pastry, although all my life I have loved to bake and cook sweet things, you don't realize the mistakes you make until you start to get serious about it. Although I have studied many things on my own, molding that knowledge and taking it on the right path has been the best decision I have ever made.
