Hello, how are you? Do you prefer manok(chicken) or baboy(pork) when cooking adobo? Mine is mostly chicken, one of the reasons is that it is easy to cook and not time-consuming like the one with pork, but sometimes there are good pork that is easy to tenderize.
Adobo is the one easiest dish I ever cook and I sometimes people hate cooking it because they end up taste bitter and I remembered when go on the motorcycle roadtrip with my dad one of his friend pocket lunch is adobo same as we and you know we like to share our food to other and when he tasted our adobo he said it is delicious and then he asked ask to get some of his adobo and yeah his taste like straight soy sauce LOL. I wonder if he never touched his adobo, but I am proud that he likes the adobo from our pocket lunch.

- 1/2 Cup Cooking Oil
- 5 Tomatoes
- 1 Carrot
- 1 Bell Pepper
- 1/2 Kg Chicken
- 5 Cloves Garlic
- 1 Red Onion
- 4 tbsp. Soy Sauce
- 1 tbsp. White Vinegar
- 1 tsp. Brown Sugar
- 1/2 tsp. All-In-One Seasoning
- 1l Water
- 1/4 tsp. Ground Pepper

In a hot pan, I added about a half cup of cooking oil.
Then I like to fry the carrots, potatoes, and red bell pepper, which gives a unique taste to the adobo. Cook until browning starts appearing. Set them aside for later.
After that, before I put in the chicken, I reduce the cooking and leave about a tablespoon of it, and then cook the chicken until it changes color to pinking to pale.
Then I added the aromatics like garlic, red onion, and bell pepper, adding bell pepper to the adobo makes the sauce taste better, try it some times. I bet you will like it.
I added 4 tablespoons of soy sauce.
A tablespoon of white vinegar.
A teaspoon of brown sugar.
Half a teaspoon of all-in-one seasoning.
And then I added 1 litre of water. Let it cook for about 20-30 minutes on medium to low heat, making sure to look every 5-10 minutes to prevent the dish from burning.
I almost forgot to add ground pepper, so I am going to add about 1/4 teaspoon of it. Now the water is reduced. It is a good sign that the chicken is almost tender.
Then I added the carrots and potatoes that I had fried earlier. Cook it for about 5-7 minutes on low heat. Add water if needed.
