Greetings!
Here's another dish that is so versatile, it is commonly called just plain "Sotanghon" in my country. When we say Sotanghon, most of the time it is a dish with lots of soup combined with different kinds of vegetables. Sometimes adding just a single type of vegetable to this dish would do. But you can definitely add more if you want. That's how versatile this dish is.
This dish can also be cooked on its own. Sometimes we cooked it with very little soup.
When I was young my eldest sister would always cook this dish with lots of soup combined with chicken stock and chicken and some black beans or white beans (whatever is available), but most of the time it is the white beans that are always available. To me, the Sotanghon and the black/white beans are some of the most delicious dishes that I have tasted so far in my life.
Back in the day, when there is no vegetable available my father would butcher one of our livestock (chicken) to be combined with Sotanghon. Believe me, the Sotanghon combined with just chicken would make a very delicious dish. If we are lucky, a Sotanghon dish with chicken and black/beans is so very delicious. It is so very delicious making it easily one of my all-time favorite dishes.
Today, the variant that I am going to cook is Sotanghon with Chayote, Cabbage, and Tofu. Just like I said earlier you can cook this dish on its own. With that being said, you can cook this dish with only a vegetable added.
I added Chayote, Cabbage, and Tofu because this dish has to feed 7 people. You can definitely cook this dish by omitting either one of the two vegetables which are Chayote and Cabbage. Additionally, you can also omit the Tofu if you want. That's how versatile this dish is.
Aside from Chayote and Cabbage, you can definitely use Snow Cabbage, Bottle Gourd, Ribbed Loofah, white/black beans as a substitute. You can choose to only use one of the vegetables that I mentioned.
So, without further, this is how I cook this very delicious dish...
By the way, you can also combine shrimps on this dish if it is available.

- Sotanghon
- Tofu
- Chayote
- Cabbage
- Black ground pepper
- Garlic
- Onion
- Salt
- Cooking oil

Wash and slice the tofu into cubes
Wash and slice the cabbae into strips
Peel and slice the chayote
Peel and slice the onion
Peel and slice the garlic
Prepare the sotanghon
Prepare the ground black pepper

1. Sautee the garlic and onion with cooking oil
2. Add some water (you can definitely add less or more amount of water according to your preference)
3. Add the ground black pepper, and let it boil
4. When it starts to boil add the sotanghon and the tofu, add some salt
5. Add the chayote, and let it boil
6. When the chayote is about to be cooked add the cabbage, when the cabbage is cooked it is done
