A very simple creamy dessert that can be used in a cake.
Ingredients:
- 450 g of cashews
- 500 ml of water
- 2 tablespoons of coconut oil
- 1 teaspoon of vanilla extract
- 160 ml of coconut yogurt
- 350 ml of rice milk
- 200 g of semi-sweet vegan chocolate
- 1 tablespoon of agave syrup (optional)
- berries for the topping
- a teaspoon of chocolate shavings
Preparation:
- Soak the cashews in water for at least three hours.
- Drain it well and put it in a blender.
Add coconut oil, vanilla extract and coconut yogurt and blend until smooth.
- Place rice milk in a pot and bring it to boil. Take it off the heat and add chopped chocolate.
Slowly stir until the chocolate is completely melted. Add agave syrup (up to the taste). - Mix the two mixtures together in a blender.
- Serve it in small jars decorated with berries and chocolate shavings.
