Here is my special onion soup, white onions to be exact, this is a dish that I usually cook in winter but now it is so cold that it is good even in this season.
It doesn't take long to make it, just a little time and patience a kilo of finely chopped white onions, three tablespoons of flour, a pinch of parsley, water, salt and a tablespoon of cumin.
Take the onion pieces and fry them a little in a pan, brown them until golden, with a little oil, then put the water to boil and add three tablespoons of flour while boiling, when the flour is mixed with the water add the chopped onions and stir for about thirty minutes until the soup has a homogeneous appearance.
When it is finished, add two leaves of parsley or sage if you like and a sprinkle of Parmesan, the soup is ready, perfect for the cold and very healthy because the onion is very good for the immune system.
