My mum cooked lunch and dinner yesterday and boy was it a treat. She cooked 2 dishes and of cource rice as always. 1 was a chicken dish and another a vegetable dish.
The chicken dish was a chicken casserole which she hasn't cooked for in awhile so it was a real treat. It's chicken that's been cooked with potatoes and cinnamon.
First garlic is sautéed in a wok then the potatoes that has been sliced are added along with the a cinnamon stick. The chicken was marinated with soy sauce and oyster sauce for about 15 minutes then added to fry in the wok. Water is then added and then it's simmered on low heat for 30 minutes until the chicken is cooked and tender. It's then seasoned to taste and ready to be served.
The chicken was extra delicious as it was bought from the market. The chicken at the wet market seems to always taste a lot better then the ones at the supermarket.
The vegetables were 'kangkung' also known water spinach thats simple stir fried with 'sambal'; a chili paste with fermented shrimp paste. The vegetables were cooked perfectly. Still had a crunch and super flavorful.
It was a delicious meal especially the chicken casserole. Try it out. Its fairly simple but extremely delightful.
