Here's a dish that I created, well sorta created. It was already stuff we were serving on the truck but a customer told us why don't we combine the 2 which was our beef chili gravy and our pasta noodles. He tried it and said it was awesome. Then we tried it and .... yeah... it's gotten on our special's menu since.
The gravy is sorta like a beef chili but more to an Indian version of it called keema which is mince beef in a tomato base sauce but with lots of herbs and spices.
I use a blend of more than 10 spices. Some of them are turmeric, chili powder, smoked paprika, sweet paprika, fenugreek, cumin, coriander powder, cinnamon, cardamom, cloves, black pepper and some other stuff.
I also hit it with some worchestershire sauce for a little vinegary kick to the dish. Tomatoes, onions, garlic are the aromatics and of course our 80/20 beef mince that we grind in-house.
The meat is seared on the flat top to give it maximum seared edges which imparts loads of flavor and makes this "chili" really unctuous and hearty.
Top this off on a burger or some pasta or even some mash... or any carb for that matter and you'll get yourself a delicious hearty meal.
During this MCO period, we're doing deliveries and this was the special for last week which we served up with some tater tots on the side to thank all our loyal customers that are patroning even in this challenging situation. Not easy for F&B and I'm sure many other service industry businesses but we're doing what we can, adapting, and making it through.
