Here in Malaysia, it's super common to find boneless chicken thighs on any place that serves a Western menu. Chicken thighs are super popular here and it often the cut of choice compared to the breast or wings. Needless to say, a boneless chicken chop without the bone makes it an even more popular cut.
Since the MCO in Malaysia started, we've been reinventing ourselves and moving from operating our food truck and catering business to a delivery base F&B. Thank God that we have a central kitchen that we could switch the way we operate quite quickly.
Logistics have been a problem but we're managing and getting better by the week.
Anyway, back to the chicken chops.
I marinate mine with cajun spices, rosemary, carotino oil, salt and Sarawak black pepper. This is done overnight at least to get maximum flavor penetration into the chop.
You could pan fry this, oven roast it, or stew it in some gravy; which is my personal favorite way to cook it as it'll be all in one pan.
We're serving this at RM10 for 2 pieces of these chicken chops which is about <2.50 USD. Really inexpensive for a delicious and succulent piece of meat that is all marinated and ready to fry. It's also available frozen and can store up to 6 months at least in the freezer which allows our customers to cook to their own convenience and timing.
