Hello, lovers of delicious and healthy food. Decided to finish off the fish sauce by Chantico today and made baked fish with vegetables and potatoes for lunch.
Unfortunately, fresh fish is not a frequent guest in our area, so we took a frozen fish, defrosted it for a few hours, then put it in a glass baking dish, added salt and pepper and topped with chopped onions and carrots.
For juiciness we added some mayonnaise (as we were afraid that the fish was overcooked and would be dry), and while the fish was languishing in the oven we boiled a dozen potatoes for garnish.
The result exceeded all expectations - the sweetness of carrots perfectly matched the salty and juicy fish, and the unusual sauce, which includes hot habanero peppers and sauerkraut complemented the taste perfectly.
Of course, it's a shame that this sauce is no longer available and the folks at Chantico Craft Company are now focusing on a new line of sauces with tropical fruits and extremely hot Carolina Reaper peppers, but it's worth saying - I was very pleased that I caught this "fish dog" and got a couple of bottles last year.
