This weekend we planned to have an outdoor holiday with friends and a bbq party, but on Friday night the weather turned bad and we had to cook bbq in the kitchen.
Friday night, after work I just went to the butcher's shop and took a couple kilos of pork neck which the butcher kindly cut into big portions, so all I had to do was to marinate the meat "overnight" and since we have a large company and everyone has different tastes, the marinade was simple - salt, pepper, usual and red onions and a little vinegar.
Having mixed everything properly, the meat was sent to the fridge "under the pressure" to marinade thoroughly in its own juice.
Marinated meat is cooked rather quickly on the coals, but since we had a regular kitchen at our disposal, the cooking was divided into several stages. While the girls were cutting vegetables and herbs, the boys and I quickly threaded the meat onto long wooden skewers, and using a regular flat baking pan proceeded to fry them. A couple of minutes on each of 4 sides is quite enough to have a nice brown "crust".
After that, the meat went into the oven for 20 minutes in a deep tray covered with foil. The foil is needed so that the meat "steamed" and did not lose juiciness.
The result, though it did not have my favorite specific smell of fire and coals, was very good and everyone was more than happy. In addition, as always, I made a little exotic and for the girls I brought medium spicy sauces made of pear and berries mixed with habanero, and for the men's audience - extremely spicy creamy coconut-grapefruit Moloko.
Hopefully, next weekend the weather will be nicer and we'll be able to get out of the house and cook some grilled goodies :)
