Life is too short not to have something sweet and "naughty" now and then. Sugar is not healthy when you get too much of it, but o damn it is nice! I can understand the addictive properties of it because once I start I cannot stop. That is why I rather stay clear from it. I mean you can only eat so many leafy greens before your body says no more, please. Recently I have been talking to and
(sorry for the shameless tagging!) about chocolate and the various things you can do with it. It got to my head and I just needed to make something chocolaty and sweet. I also recently watched a video of ChefSteps and how they make a butter chocolate ganache sauce for steaks. This is not a vegan recipe, but when you take the butter out and use coconut oil, I think this will be vegan! In any case, I needed something sweet, so here is my Lazy Sunday Ganache Fridge Tart Recipe!
This is such a simple recipe and method that it almost scares me how easily you can make something this sweet and gorge yourself on it. Again, I force myself away from sugar because I know how addictive it can be. Either way, the recipe can be molded into different flavors! At the end of the recipe, I will write various ideas I want to pursue, one might trigger in you a will to make this.
The recipe consists of two parts: a browned butter and cookie/biscuit base and a ganache top made with butter rather than cream. You place it in the fridge for two or three hours, or overnight, and plate it in any way you like. Obviously, I tried to be cool and added some cacao powder, powdered sugar, and some of the dulce de leche. I need to credit all food stylists and food photographers, it is not easy and what they can do is awesome! Without further ado, let us dive into this recipe.
Recipe
What you will need for this recipe is:
- 1 packet of biscuits
- 300g of butter
- 1 slab of chocolate
- 2 or 3 heaped tbsp of cacao powder
- dulce de leche
Method
The filling and base have a couple of steps. Firstly, you need to brown the butter, add this to the crumbled biscuits, cool this down. You then need to make the chocolate ganache with butter and decorate it accordingly.
Crumble the Biscuits
The first step is to determine how many cookies you will need. I am not a pastry chef or dessert expert. There are better ways and more precise recipes. I just placed the base with them and crumbled them.
Brown the Butter for the Base
I love browned butter. I browned roughly 150g or so of butter. Browing butter relies on visual and olfactory keys. This is again not very precise, but you will smell that familiar smell of browned butter. Nutty and caramel, deep and intense. I have no idea how to describe it better. But brown the butter and add this to the crumbled cookies. I think they refer to it as a wet sand consistency. Pack this into your dish and cool it down in the fridge while you prepare the ganache filling.
Cacao Butter Ganache
Ganache is made with chocolate and cream. Following the ChefStep (YouTube video listed at the start) recipe, I use butter instead. This recipe is an overload of butter! Again, I think if you use cacao butter or coconut oil, it will be vegan and more healthy.
In any case. Over a double boiler, melt the chocolate. Take some room temperature butter (while the double boiler is melting the chocolate) and mix some cacao powder into it (in a separate bowl).
When this is done, temper the chocolate (add some chopped chocolate to the melted chocolate when it is taken off of the double boiler) and add the cacao powder butter.
Whip Air into the Cooled Mixture
In a separate bowl, add some ice. As per the recipe instructions in the video listed at the start of the recipe, whip some air into the mixture whilst it cools down. You will see a color change. Do not let it get too hard! Just until it firms up a little. When you see the color change and it getting firmer, you are done. Take it off the ice.

Decorate
I place the cooled chocolate ganache on the cooled base. I spread it evenly (you can use even more if you'd like, as you can see I added a touch too little). Add some finishing flavors and your personal touch. I had some dolce de leche, so I used that! But at the end of the post, I will give some of the other ideas I want to explore if you are interested.
Cool Down
Cool it either for a couple of hours or overnight. The colder the better! It firms up really well and has a satisfying "snap" to it. I guess this snap will be even better when you use coconut oil. I will try this next time!
Some Other Ideas
This is basically a "base" or "blank canvas" recipe. When I made it, so many ideas popped into my head:
- Coffee cream ganache and chocolate-coffee beans
- Coconut cream ganache and coconut pieces
- Berry sauce on top of the plain ganache tart
- Salted caramel cubes and flaky sea salt
- Dates and coconut base, dates and ganache filling
