Where is the onion?!?!
Greetings everyone and welcome back to another edition of #FoodFriday, as part of the #HIveBloPoMo I have challenged myself to write about food once a week…. And you’re my witnesses 😃
So what’s on the menu today???
I decided to go with chicken, sweet potato and a salad!
Why chicken? Cause everyone loves chicken!!! Hahha have you ever met someone that’s not vegan or vegetarian that just flat out doesn’t like chicken? But also because I’ve been working out like crazy the last couple of weeks and chicken is okay to eat.
So what do you need?
• ½ kg of chicken fillet
• One sweet potato
• A tomato
• One egg
• Garlic
• Cheese (I used ‘Jong belegen’ Dutch cheese, and some cumin cheese)
You know I was going to write ‘Onion’ down here but when I started getting everything ready I notice my onion was missing. This might be the case of the ghost of onion’s past that has come back to haunt me orrrrrrrr I just forgot I had already used it. We will never know 🤣🤣🤣
I did however add fried dried onions to the mix and they worked out fine.

Where do we begin?
First things first! You might want to start peeling your sweet potato. Those things take while to boil!
Semi-Pro tip: Slice the sweet potato into slices so it boils easier.
Second, work on your chicken. Normally I would prepare it first and maybe even marinade it but since I’m watching my health I choose to go for spices and garlic. That’s it.
Stir fry the chicken to your taste…
Last but not least start with the salad.
I used a simple mix of lettuce, a tomato, fried onions. Added a boiled egg and some slices of cheese (yes I love cheese!). Finally I used the honey mustard sauce which has been my favorite for years.
The final result!
TADAAAA!
Before you click away, know that you have two options. The one with the sweet potato and one without. If you want less carbs just add the chicken to the salad (like I did later) and skip the sweet potato all together

To think I ALMOST skipped cooking today because I was way too tired after my run. But I got a #Foodfriday shout out from @Fionasfavourites and that gave me some extra spirit!
