Chilling with Chili con Carne
Today I decided to make my personalized version of the famous Chili Con Carne. I say this both as an introduction and as a disclaimer, because I know this is a somewhat traditional dish that you can go wild with. I however, have just finished my run and I’m tired so some would say this quick dish is just what the doctor ordered 😃.
What will you need for my quick version:
- Minced beef (I used about 450g)
- Rice (75g)
- Garlic
- Beans (I used white beans in tomato sauce, but you can use fresh ones if you have more time)
- Onion (If you can find yours)
- Tomatoes (or tomato sauce)
That’s it!
You can add Bell peppers (Paprika), celery, cilantro and all that good stuff, it works either way!
Usual suspects are back
Oh special shout out to this little guy. I know it says rum but what it really is, is ‘geslagen peper’ from Suriname. It’s a mix of dried/stomped Madam Jeanette peppers and some other spices. It’s basically my go-to SPICE in a bottle, and I do mean SPICE, this will have you feel the burn if you’re not careful 😫.
First things first!
Put the rice on! There is nothing worse that everything being done and you having to wait for the rice.
I realize it can be a challenge to some if you’re used to a rice cooker but I simple but the rice in a pot, fill it with water and measure the amount using the first digit of my pinky finger. And of course, cook on a low fire.
Fun fact: I normally don’t eat rice; white rice especially does not fit in my diet. But this time 1) My rice needed to get eaten or it would have gone bad and 2) I didn’t want to eat this with bread 🤷🏾♂️.
Second – Bring on the meat!
I want my minced beef to be able to stand on it’s on. I should basically be able to eat it without the Chili so make sure you have enough spices. I don’t know if I’m alone is this but minced meat is pretty fatty so when I’m stir-frying it, I always scoop out the fat. It might be a diet thing but I feel it helps. Am I alone in this?👀
Third – Lets blend!
Add the beans in tomato sauce… I added extra diced tomatoes.
This is also the part where you can add celery and other things.
And that’s it basically, I mean I could write another paragraph to make it seem like this is hard work but like I said, it’s a quick dish 😃😃😃.
