When the inspiration and energy comes, I am able to cook something rather out of the norm. My go-to is always Chinese style stir fry which is fast and easy, and not ending up with messy kitchen too. However, months ago, I managed to gear up my energy to cook a meal I seldom cooked. Because I knew the children and husband preferred this type of food.
Creamy Cheesy Baked Chicken with vegetables
We called this western food. My children and husband love anything creamy and cheesy, so let's!
The Chicken
I used chicken legs, simply marinate with some salt, pepper, paprika and cumin powder. I did not use proper measurement, all by estimation.
Then lightly pan fry the chicken in a pan after heating up the butter. Then, take out the chicken, with the remaining dried up oil on the pan, I used for the creamy sauce.
Creamy sauce
Using the same pan I used to pan fry the chicken, add in more butter if very dry, sauté the garlic and onion, followed by a tablespoon of flour, mix together.
Then I added in cooking cream as well as milk. Lastly, add in a handful of mozzarella cheese. Mix all together. Super cheesy and creamy. I knew the whole family loved this!
Baked chicken
I wanted to continue with the chicken by baking them in the oven. Before that, I topped each chicken leg with the creamy sauce first so some extra flavour on the chicken skin.
Put to bake at 180°C for 30 minutes. The result — flavourful chicken with crispy cheesy skin and juicy tender chicken meat. Yums!
Baked vegetables
I also baked some vegetables such as purple sweet potatoes, carrots and potatoes with only added salt and a drizzle of olive oil. So simple but so so delicious, especially the sweet potatoes.
That's it! All cooked! So just placed one chicken leg on a serving plate, some baked vegetables. As for the sauce, I placed it in one serving bowl for them to scoop however much amount they wanted to go with the crispy chicken. All them kept telling me thumbs-up! Then, I went to the basin and saw whole mountain of dishes to be washed. Lol.
