I cooked "Leningrad salad" according to the recipe. Although each hostess has her own version of the recipe.
But the basic composition of the ingredients is the same:
- 250 g of boiled meat or poultry fillet (or sausage),
- 2 pcs. - potatoes, 2 pcs - pickles,
- 2 tablespoons - canned green peas :; 2 eggs,
- 250g mayonnaise - I made Easy Vegan Aquafaba Mayonnaise 😊 🥙
- 1 tomato,
- 50 g fruit, herbs, salt to your taste and preference. I did not add any fruit to the salad.
Aquafaba is a decoction of liquid that remains after boiled chickpeas, beans or peas. It is a viscous liquid that contains many proteins and carbohydrates. Aquafaba is able to completely replace egg white in its properties.
I used the canned liquid from under green peas to reduce the time to make mayonnaise and simplify the process.
Pour the liquid from under the peas into a glass for the immersion blender.
You can add any seasoning you like. Add a little lemon juice.
Next, immerse the blender in the glass and whisk all the contents until smooth. Gradually add vegetable oil until the desired thickness.
Step by Step:
Potatoes boiled in their skins, peeled, and shredded. Marinated cucumbers, eggs, boiled fillet chop. Season with salt and pepper.
All the ingredients of the salad are chopped and combined.
We add the mayonnaise!
Place the salad in a salad bowl in the form of a slide and lay the slices of tomato or fruit.
