How are you all doing? Hopefully, you´re all safe and healthy as of this writing. Today, I am sharing an Asian food which some of you know already...Pancit Bihon. In the Filipino cuisine, Pancit is a term for noodles that are cooked with vegetables or any other ingredients. Either the noodle is made with flour or in this recipe, it is the Vermicelli, a rice based noodle. Depending on the region, Pancit noodle varies according to region, how they are cooked and the type of ingredients used.
A day before we went food shopping, I still had rest vegetables in the fridge, not knowing what to do with them, I looked at my pantry and I saw a pack of rice noodle which I bought some weeks before and was kept as reserve noodle pack when ever the need to use it arises. It came in handy since some of the basic ingredients were already available.
Here I used vegetables I have. My husband and I do not eat seafoods, so this recipe is purely plant based. I got olive oil in the absence of sesame oil. All ingredients were prepared beforehand so that cooking is done in a short period of time. So without futher ado, here is the recipe below.
Pancit Bihon
Ingredients:
Vermicelli noodles
red onion
garlic, crushed
Flat green beans
carrots
celery
zucchini
bell pepper ( red, green and yellow )
Soy sauce
cooking oil preferrably sesame oil
Procedures: (Cut all vegetables as shown in the images)
1... Boil water with 1 teaspoon oil and 1 teaspoon salt in a casserole. Add the vermicelli noodles and boil for about 1-2 minutes or until the noodles get soft. Take out from the casserole and set aside.
2... In a hot pan with 2 tabalespoons cooking oil, fry the garlic followed by the onions. Stir fry until soft or brown. Add the carrots, fry about 10 minutes , followed by all other vegetables.
3...Add 3/4 cup water, continue to stir-fry until all veggies become soft and water almost evaporated. Add 1-2 tablespoons of soy sauce. Mix and continue stirring.
4...Then add the noodles, mix until they are consolidated into the vegetables. Add salt and pepper and adjust according to your taste preference. Best served hot.
In this recipe, there are no rules as to how many or what vegetables you will be using, depending on your preference, you may add ingredients according to your liking. You may add other spices if you like it hot... we are contented with the salt and pepper , soy sauce and the garlic.
