Hey guys! I've had cravings for Ekpang Nkukwo(that's the name of the meal) one of the most loved and sweetest delicacy over here in Akwa Ibom State, Nigeria.
I couldn't cook and prepare it due to the fact that I'm very busy these days and I could not go get it at the restaurant because I wouldn't be satisfied buying it and eating there.
So this morning, I had set an alarm for 5am, which will help me wake up and do justice to it. When the phone rang, I quickly jumped out of the bed and started with the preparations.
Ekpang Nkukwo is a simple meal to prepare though it takes time but trust me it's very delicious. Water yam, Cocoyam and the fruits leaves gotten from the Cocoyam are the main and important things needed in order to prepare it.
It's not a regular food we Akwaibiomites prepare more often because it takes time. But during wedding ceremonies especially the traditional marriage you will see women preparing it and that's because the bride's family usually present all native food to the husband's family and that shows that the husband will be eating all of those meal when they get married.
Ingredients used in preparing are;
- Water yam
- Cocoyam
- Cocoyam fruits leaves
- Salt
- Maggi
- Pepper
- Fish
- Cow skin
- Palm oil
- Perewinkles
- Onions (optional).
When you have all these mentioned above, you can prepare Ekpang Nkukwo very well.

Then I plucked the Cocoyam fruits leaves which is usually used to tie the water yam and Cocoyam mixed together according to the shape and size you need.
The recipes/procedures;
- Pill your water yam and Cocoyam, wash and grind them.
- Pluck and wash the Cocoyam fruits leaves according to the desired shape and size you want.
- Use the Cocoyam fruits leaves to tie the water yam and Cocoyam which was mixed together.
- Place your pot on fire, add water and when it boils, add your ingredients like Maggi, salt ,fish and the rest of them.
- Turn it and taste it then allow it for 5 10 minutes.
- Add palm oil and vegetables and turn. After wards, your Ekpang Nkukwo is ready to be served.
