Hello foodies!
During the Holidays, I had some time to just sit at my computer and enjoy watching to some old photos. This is something I cherish and it's something to bring me joy! I said it a few times in other of my posts. And it happened to find a LOT of food photos taken randomly day by day, week by week and then it hit me: Sharing with you some of the foods and recipes we have in a week!
I dont know if this is interesting for you, but for a foodie I think it is! I'm not taking step-by-step photos of the whole process. It's going to be just the final product. I'll keep sharing my recipes with you here and those will be separate blogs, like usual.
Quick Intro: We are a family of three: me, my husband and my 4yrs old son. As you can imagine, our child has slightly a different diet than ours. Well, we all have different eating habits, to say so.
My son Caleb doesn't eat sugar (at least not often), he doesnt eat sauces, spicy food, weird food, etc. If you have kids, you know how it is. Children usually have a different diet than us, the adults. They are more picky and they doesn't like food that the'y dont recognize. At least, this is my son.
My husband is a meat lover, as many men are. I am not. I love everything pasta, he is mheww. I preffer fried/boiled eggs, he likes omelette or scrambled eggs. I love red sauce, he preffers white sauce. I love cakes and sweets (yup...guilty π), he doesnt. He preffers salty lentil chips, I would preffer a cheesecake instead. Hahaha
So there are days when we eat different foods, especially for breakfast or snacks.

So here they are: some meals we had this last week. Is Monday night here, so these are all photos taken last week. I'll try keeping posting this series of weekly meal recipes every monday or tuesday. Well, the point is at the beginning of the week.

Rocket Salad & Grilled Beef
Just a simple Rocket Salad (Rucolla), cherry tomatoes and parmezan slices.
Rybeye Steak and parmezan on top.
Apple Sauce Pancakes
Well, this was an improvized recipe. I wanted to get rid of the apple sauce I still had it in the fridge for days and some coconut milk as well. I added oat flour combined with coconut flour, cinnamon and maybe some baking powder as well. And of course, eggs. They were absoulutely delicious, me and my son had them for breakfast.
Veggies Meatball Soup
My son Caleb loves soups. So I always have a sort of soup in the fridge, ready for busy days or for those times he won't eat what me and my husband have at dinner. For example, a salad.
This meatball soup is easy to make and out of all soups in Romania, is my son and husband's favorite. They love meatballs. I'm not really a fan...but I'm happy they love it so I do it very often.
Veggies: carrot, onion, parley root and greens, potato, peas, celery root.
Meatballs: beef or pork meat. I usually preffer a combo of these two. Sometimes chicken works as well.
Meatballs ingredients: minced meat rice, egg, salt, pepper, dried green parsley, dried thyme, paprika.
In the end, I add a few TBspoons of heavy cream (this is optional). Or you can use tomato sauce.
Greek Yoghurt and Honey
This is a favorite for me and my son. Husband doesnt eat it at home, only in Greece! Weird!!? Well, not really because the yoghurt in Greece is something else! Also the flavorful honey! Yummy!
Crispy Chicken Salad
This is a salad made with leftover Crispy Chicken I did one night before. And we had it for lunch.
I just quickly made a salad for these yummy chicken bites.
Salad ingredients: rocket and radicchio salad, cherry tomatoes, feta cheese, olives.
Chicken strips were fried and covered in corn flakes. Kind of unhealthy but tasty as...Yeah!
Hawaii Toast π
This is really one of my favorite thing! Its comfort food! I love it so so much!π
You can have it for breakfast, lunch, dinner or even a snack.
Take some bread slices, put some butter in a very thin layer, then add ham slices, pine(m)apple slices and on top cheese slices.
Bake these for 5-10 minutes until gold and crispy!
YUM YUM!
Eggs for Breakfast π³
All three of us love eggs for breakfast. My son is in love with eggs and just recently, he started to eat omelette and scrambled egss too. He was more into fried eggs or boiled eggs, like his mom.
There's no need for description here. Usually, we have eggs and veggies on the side like avocado, tomatoes, cucumber, red bell pepper. My husband would go with some italian meats or salami too. Also he loves cheese omelette.
CrΓͺpes and Jam
Romanian's fovorites! We all them "clatite". And we have these with jam. Others preffer having nutella spread on top, ricotta cheese and raisins or vanilla sauce. I love them with apricot jam, sour cherry jam or blueberries jam.
And this is weird, but I love them with cinnamon. I just sprinkle a good amount of cinnamon, maybe some dark sugar and voila!!
CrΓͺpes are made out of: eggs, a little bit of salt, flour, milk or water, sugar (optional. I dont use it).
Mashed Potatoes and Chicken Liver
This is how Romanians cook.

My husband is a fan of organs, especially when he was looking into Liver King's diet. In case you dont know who he is, just google about it. So....we arent fans of meat organs but we are used to them because in Romanian culture, especially liver, is widely used and cooked.
You need a good amount of onions, which you caramelize in olive oil. Add liver and cook until done. Only at the end, add salt and pepper. DONE.
We served it with pickled cucumbers.
Chicken Salad
Another salad this week.
Skillet chicken bites with olive oil and Italiabn seasoning.
As for salad, it had iceberg salad, feta cheese, shredded carrot, shredded celery root, schreeded apple, corn and Olive oil for dressing. I think my husband had some crutouns with it.

Well, this is heavy food!

Green Smoothie
This is my favorite way to introduce Spinach leaves in my son's diet. He loves smoothies.
His favorite is pineapple & banana. I added oat milk and spinach.
Yoghurt Breakfast Bowl
Just a good bowl of greek yoghurt, crispy granola cereals, hemp seeds and honey on top!
