I thought sharing this with you as I found Bone Marrow interesting to eat.
It's not that long since we've created this habbit of serving Bone Marrow in our menu. Half an year....maybe?
I was skeptical at first since I'm not the one who read about it and did a research on bone marrow nutrition benefits and all. My husband did. (I am so happy having my love interested in nutrition and helping me researching on health topics).
Before sharing with you how I prepare Bone Marrow in the oven, lets have a quick look on why is it healthy and why people choose to have it on the table.
The most important thing that got us crazy about it is the fact that Bone Marrow contains a good amount of collagen and stem cells. YES, these two compounds in one food product! SIMPLY Amazing!!
So, Collagen and Stem Cells so far.
Adding that it contains calories, fat, small amounts of B Vitamins, glucosamine, glycine.
Because it is rich in Collagen, it is thought that can decrease inflammation and enhance immune function. It supports joint function, promotes skin health.
I have read all info about BM, both in English and Romanian and my husband watched all videos he could find.
We chose to have it once a week, normally.

All right, so the most two common ways of cooking Bone Maroow is to do Bone Broth or Oven Baked.
This time I present you the Oven Baked version, which is super common and I got inpspired by just looking on internet to see how others cook it.
Its pretty basic!
OVEN BAKED BONE MARROW RECIPE
Honestly, I would recommend you to google a bit and see many recipes, which are pretty much the same but I think you'll feel more comfortable and you'll find the process easier.
I like that I dont need time to make these. When I have a busy day, I love having this because it saves a lot of time and energy. Just a few minutes and the food is on the table.
So there are several ways to atart cooking BM. You can choose starting right there and now or you can start ahead by soaking the bones is salt water for many many hours, overnight.
I usually chose to keep them in salt water for a few hours, in the fridge, right the day we make them. But if I dont have this time available, I just wash them and put them in the oven.
After soaking time, you can remove the excess of meat hanging on the bones.
Put bone cuts on baking paper, on a tray after the oven is hot. (You must preheat your oven to 230°C).
Season with salt and black pepper.
Cook until marrow is soft and juicy. To make sure it is done inside, you can check using a food thermometer, and it should indicate at least 75°C.
In my oven, it takes about 15-20min for bone marrow to be ready.
We serve it on toast, with garlic and a green salad on the side.
Very important things to consider:
Dont overcook the bones as the marrow will drain out in the tray.
Dont eat it hot. It is grassy, nauseous, unsavory. Its not delicious. So give it at least a half an hour to cool down.
Serve it with garlic and a green salad like parsley, rucolla or simply green lettuce.
After taking out from the oven, sprinkle some salt.
Sometimes we'll get a more darker color on Bone Marrow, sometimes is whiter. I guess it depends of the bones or maybe the time they stayed on the water.
Its like having butter on toast, but with a more intense flavor.
Definitely its not for everyone. Many people find it gross and discusting. So I'm really curious if you guys had Bone Marrow or if you're thinking try it.
(Btw, we buy these bones from a local butcher, but I think they can be found in some supermarkets).
