Hello foodies,
Two weeks ago I was to our local market and I found Porcini mushrooms. They are available now in large quantities, all the season.
In case you don't know, they are an edible fungus type and they are considered to be a delicatese.
I bought one kilogram with 5-6 $. That would be nearly 3$ a pound. Its cheap, I think. They were manually picked up by the locals in the region of Varfurile, one small locality at the feet of Apuseni Mountains.
They were soooo big!
I wanted to try Porcini & Garlic Pasta, but for some reason I forgot by now, I didnt. So they ended up into a cream soup. We love cream soup. My favorite is lentil cream soup. 🤎
Here are the ingredients. I usually go with Champignon mushroom for cream soup in combination with a small amount of other types. Thats why becuase I prefer a mild taste when it comes to mushroom recipes.
I still need to educate my taste buds in this direction since we are a huge fan of mushrooms.
About this recipe, the mushroom flavor is very very intense. Like super INTENSE, meaty, nutty and like wood somehow. I dont know how else to describe it.
It's a bit heavy so we served it in small portions. Or maybe it wasnt and only the taste was...which made us think its heavy. Idk.
Here are the ingredients:
- porcini muhsrooms 800g
- chicken stock 800ml
- 3 white potatoes
- one medium-big onion
- butter
- just a little bit of olive oil
- thyme
- salt and pepper
Start by chopping the onion and mushrooms.
Add olive oil and onion in a pan, on medium. After a few minutes add butter. Or you can add all together from the start. Just take care not to overburn the butter.
When the onion is softend, add rest of the ingredients. Keep on low/medium heat until the mushrooms and potatoes are boiled.
Use your blender or a vertical blender to make it smooth. Adjust with salt and pepper if needed.
Thyme is not optional. For me mushroom and thyme are the perfect combo, no matter the recipe. They have to stay together. 😁
Serve it with croutons or grilled bread and a splash of aromatic olive oil, pumpkin oil or hemp.
