Sometimes when I enter the kitchen, I look at the ingredients to get inspiration. Cooking meat was easy for me - now I am trying my best to make more vegan dishes and in a natural way. A delicious, healthy and easy dish is always a treat to make. This chickpeas recipe is simple dish but it is certainly satisfying.
The ingredients (approximate)
- 400 g cooked chickpeas
- 2 large onions - (sliced in rings)
- 3 medium size carrots (thinly sliced)
- a handful of fresh parsley (chopped)
-2 tablespoons oil (of choice) - salt and pepper (to taste)
Preparation
- Sautée the onions in hot oil on medium flame -until translucent but not brown.
- Add the carrots to the pan and season with a pinch of salt. Cover with a lid. Stir occasionally adding a few tablespoons of water to de-glaze and prevent from burning.
- When carrots are cooked - add the cooked chickpeas and toss in the freshly chopped parsley.
- Season to taste with salt and pepper.
