As you know, soups are my passion and today while rummaging through an old recipe book I found a recipe for a traditional Tuscan soup which I immediately decided to reproduce! A simple soup with ingredients that don't cost much but is rich in flavour, warmth and tradition!
We need some easily available ingredients in the autumn and winter seasons.
I know, I know lately I only publish soups or almost nothing but during the cold season they are really my favorite dish!
I'll list what we need
Two large vine tomatoes.
500 ml of vegetable broth
3 tablespoons of salt
300 grams of white cabbage
100 grams of borlotti beans
an egg.
Two carrots
First, prepare a large wok with the already salted broth to boil on a slow flame, then take the tomatoes and cut them finely, add them to the broth and use the mini pimer for about five minutes to make the tomatoes semi-liquid, prepare then the cabbage, clean it well under running water and then remove the outer leaves, take a sharp knife and cut it into very, very fine slices.
Add it slowly to the wok, stirring carefully, then add the beans but first drain them from the typical liquid of canned beans and rinse them, add them slowly to the wok, continuing to stir over a low heat, than peel the carrots and cut in in slices add it in the soup too.
You must mix at low flame for almost 50/60 minutes it's quite a long recipe but the taste really deserve all the time we use for make it.
When the soup it's almost ready break an egg on it and let it boil until it came up on the soup surface, than the soup it's ready to be served!
If you want you can enjoy the soup with tuscan bread and a good bottle of wine.
