Pasta and hot beans is a cool, yummi and warm substantial first course, a big classic of the Italian cuisine, we can call it traditional because it has its a start in the poor peasant tradition; especially in southern Italy and in particular in Naples where it is called "Past e Fasul" in the local language, but it is very popular in all southern and central Italy. The peculiarity is that the pasta (little pasta or better tubetti) is cooked together with the beans; previously stewed with tomato sauce , garlic, oil and fresh parsley; with the same method of Pasta and Potatoes another classical Italian traditional poor dish.
In this way, the starch released by the pasta binds to the legumes which will slowly fall apart; giving life to the classic creamy look of the pasta and Fasul, or super tasty Pasta and Beans! A typical winter dish much appreciate in all Italy.
Ingredients for the pasta and beans
• 400 g of borlotti beans
• 80 g of egg maltagliati or tubetti pasta
• 3 tablespoons of tomato pulp
• fresh parsley
• 1 clove of garlic
• extra virgin olive oil
• salt
• pepper.
You cook together the beans, with the tomatoes, togheter with the pasta you boil all the things togheter than you add a spoon of extra virgin oil and a pinch of parsley and salt.
When the pasta is ready, you see it because the tomatoes and the beans look like a cream, you put all in a dish and add a little bit of pepper.
It's really a yummi pasta, easy to do, warm and perfect for the cold days.
It's full vegetarian too.
