Hello fellow Foodies!
This time I'd like to share with you a quick recipe for a homemade, gluten-free and lectin-free bread. If you're staying away from grains but at the same time feeling like missing your beloved breadstuff, give this one a go! We're going to make a healthy (high fat & fiber, low carb) and delicious loaf, that will take no more than 10 minutes to prepare.
The original recipe can be found here, available in Polish.
Ingredients
Dry ingredients
- 165 grams of flaxseed flour
- 30 grams of psyllium husk
- 50 grams of hemp seeds
- 2 tea spoons of baking powder
- 1/2 tsp of salt
Wet ingredients
- 3 medium size eggs
- 250 ml (~8.5 fl oz) of warm water
Topping
- 1 tbsp of sesame seeds
Preparation
Mix all the dry ingredients in a bowl, and combine eggs with water in a separate one. Then pour the liquid into the mix and stir until a solid mass is formed. Let it rest for about 5 minutes, so the flaxseed flour can absorb the water.
Preheat the oven to 180 degrees Celsius (~ 350 Fahrenheit).
Form a loaf and make several cuts, so the air can escape while in the oven (this prevents cracks in the bread). Top it off with sesame seeds.
Put the loaf on a baking tray covered with baking paper. Then put it in the oven for about 1 hour. When ready, let it cool for a bit.
Enjoy!
