I know most of us are fond of eating delicious food - sometimes or most of the time. If we're stressed in life or at work, we released it through traveling to other places looking at the beautiful sceneries but eating delicious foods is definitely at the top of the list. Am I right?😊
Just a little bit of story about my late mother. She loved to cook for us. She didn't prefer to buy ready-to-eat foods because according to her seeing us happy with her cooking makes her feel like she won a contest.
She was really into cooking. Her recipes taste delicious even though they were only simple. She had her style of cooking. Whenever there is an occasion, she's hands-on with the food and she made me help too. I'm her taste buddy 😊. She let me slice the spices and sometimes I'm the one who handles the ladle and mix all the recipes. Because of this, I learned a lot and cooking bacame one of my hobbies. Now I'm gonna share with you one of her recipes. This is what I had promised in my last blog that I'm gonna share here what were dishes I've cooked.
I bought all the ingredients at the market.
Pancit Bihon and Canton Recipe
Pancit Bihon and Canton are the terms for noodles in Filipino cuisine. It is a popular dish for all occasions like Birthdays, Weddings, Christenings, Fiestas, and many more. It is believed that Bihon and Canton or Noodles mean long-life; that's why it is always being prepared every time there's an occasion. In Bisaya terms, this can be called Bam-i, a popular dish for a party.
These are the ingredients.
250grams of Pork meat
500grams Pancit Canton
250 grams of Pancit Bihon
3 cloves of Garlic
1pc of Red Onions
1 medium Spring Onions
1/2 to 1pc. of Sayote/Chayote
1-2 pcs. of Lemon and 1/8 teaspoon of Pepper
3 tablespoon of Soy Sauce
2-3 tbsp of oil
1 tbsp of Salt
2 cups of Water
Here's how we prepare our Filipino Pancit Bihon and Canton (noodles).
It is so easy to prepare this kind of dish. Simple but yummy!!! All you have to do as follows:
1.Prepare the pork meat and slice them into small pieces or whatever your desired size.
2.Slice or mince the onion, garlic, and spring onion, and set aside.
3.In a medium wok, pour the oil over a medium-high heat level.
4.Saute the sliced onion and followed by the minced garlic. When it already smells good, that means we are ready for the next steps.
5.The chopped/sliced meat shall be added next and fried for 5-8 minutes until it starts to turn brown. When it smells good, it means meat has started to cook.
6.Then add the slice of sayote /chayote, stir and mix all the spices. You can also add bell pepper(1-2 pcs)and carrots (1pc) but since I don't have available bell pepper and carrots I only used sayote. Mix all the spices thoroughly and simmer for about 15 to 20 minutes or until the meat is soft and tender.
7.Whenever meat is already soft and tender, add the soy sauce as a seasoning. Then, add salt and pepper to taste. Lastly, add two cups of water, and bring to a boil.
8.While waiting let the Pancit Bihon soak in water for 2-3 minutes to soften the noodles and then wash the Pancit Canton thoroughly.
9.Add the Bihon and Canton to the liquid. Mix them well and cover. Let it set until tender for about 5 to 8 minutes.
10.Add 2-3 grams crushed chicharon at the top of the servings. This is optional.
You can now enjoy our Pancit Bihon and Canton Filipino cuisine.
You can have this as your meal or you can eat this with rice.
You can also have this as your snack, squeeze the lemon if you wanted to serve it a little sour. This is so nice as your snack when you are watching television.
This is my daughter and she loves to eat this one, it's delicious and yummy and the rest of my family enjoys the meal.
