A few years back I stopped buying mayo and started making my own. About once a week I make a jar of it that I eat with just about every meal. I really love mayonnaise, to the point it grosses some people out.
I find making my own tastes more fresh and it's made just the way I like it. Using little avacado oil and mostly olive oil and farm fresh eggs I have never found anything as tasty.
Using a cup of oil I mix it with eggs, spices, apple cider vinegar and some hot sauce it comes out as a great condiment.
Our eggs come from a local farm and are not bleached. I need to use them more but when I make my mayonnaise I use three of them.
Using garlic powder, onion powder, pepper and salt make it tasty. But the soul of the mayonnaise comes from some very spicy hot sauce. I only use a little over a teaspoon of it but that's all I need for great taste. And gives the sauce quite the kick.
I add everything but the oil to an immersible blender container.
Its hard to show the next step as I need both hands to blend it. But I start blending and then slowly pour in the oil. Pouring slow is very important. Also the eggs need to lose their chill if they were kept in the fridge.
It comes out pretty thick but will get more saucy when placed in the refrigerator and chilled.
Putting it all in a mason jar I seal it and it's ready to add to my favorite meals.
Today I baked some French fries and grilled some burgers so i added some to the bun and to a little dish for dipping my fries in.
The consistency came out perfect, sometimes it comes out a little runny when I do not let the eggs lose their chill. But this time around it came out perfect.
Should last me another week before I make some more.
