We're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some of the recipes we've been trying at home since we've been cooking a lot nowadays! Also I'm running out of content so yeah gotta make the most of it!
So I was looking for different egg recipes to try the other day since I was craving some egg dishes. and I found this Chinese Chives & Eggs Stir Fry by the Woks of Life that reminded me of a dish that my auntie used to make for my family back when I was a kid. It's probably one of my favourite egg dishes that she's made and I remember it tasting so good! I was really excited to try this out for myself since I never got to in the past.
And turns out it's actually pretty easy! All you need is some egg, chives and seasoning. Here are the ingredients I used:
- 4 eggs
- chinese chives
- sesame oil
- salt
- sugar
- ground black pepper
- cooking oil

So Step 1: chop the chives into 1 inch pieces.
Of course you can dice it smaller or larger if you wish. But it should look something like this:
Step 2: wash the chives. Because the chives are very thin and quite fragile, they'll stick together after washing so it's easier to chop them first imo. Drain the chives after washing and leave them to dry for a bit.
Step 3: beat the eggs in a bowl.
Step 4: Add the seasonings depending on your taste. But I added about a teaspoon of salt, half a teaspoon of black pepper, a pinch of sugar and about half a teaspoon of sesame oil. I didn't really measure anything and just went with my gut. I do like my eggs on the salty side so go with your gut on this one.
Step 5: throw in the chives into the eggs and mix well until they're incorporated.
Step 6: Heat a wok on high heat until it just starts to smoke, and then turn the heat down to medium low. Wait 10 seconds, and then add the oil. Coat the wok with oil using your spatula to swirl it around. The oil should be hot but not smoking when you add the egg mixture.
Step 7: pour in the egg mixture and flip and stir them slowly.
Be careful not to let the eggs sit and brown too much so make sure to continuously stir and flip.
After a while it should look something like this:
And then I like to use the spatula and dice them up into smaller pieces so it looks like this:
with that we're pretty much done! But to complete the meal for dinner, I had cooked some rice and asked Sean to air fry some luncheon meat.
This was the luncheon meat we used and Sean sliced it and air-fried the pieces so they'd be crisp.
And this was our classic vegetable rice that I would always make by chopping up a carrot and putting frozen broccoli in with some rice and powdered chicken stock.
Then it was time to plate!
And dinner is served!
The eggs actually turned out exactly like how I imagined! The Chinese chive taste is pretty strong but it meshed really well with the eggs and the seasonings were just right. I think because of the way our induction cooker works though it might not have been as brown as the way my auntie used to cook it, but it was pretty close and looked just like how the recipe calls for I guess so that's a win!
The rice was nice and fluffy as always and paired with the crispy air fried luncheon meat and the stir fried eggs it tasted soo yummy!
It's a pretty simple and healthy meal that was pretty quick to prepare! The eggs themselves only took about 15 minutes to prepare and cook so if you're in a rush or don't feel like cooking much and still want something healthy and tasty, this is definitely a recipe worth trying!
