Hey Hive!
Now that a lot of people here have already gotten vaccinated, I'm very happy to hear that Singapore is now allowing in-house dining again but obviously you have to be vaccinated. But since there aren't any restrictions this allows us to try out different food places again!
So back during the Christmas period in 2022, there was a cool night market set up in our neighbourhood that looked really cool! There were a bunch of bright food and beveragee stalls there under a pretty big tentage and thankfully a bunch of benches and tables for patrons to sit and enjoy the food too!
It was pretty warm in there and there were vans around to circulate the air but luckily the weather was cool so we could still tolerate it.
The other side of the tent had this bigger area of benches with this wall of neon signs! I thought it was so cool and was quite reminiscent of Hong Kong streets with all their neon signs.
We took some nice pictures with the signs before checking out the stalls for snacks!
Most of the stalls were selling some pretty standard street food you'd find in night markets that pop up here (locally known as pasar malam) like Chinese sausages, dumplings, steamed buns, and colourful drinks or juices. But there were a few stalls with more hipster international dishes like burgers and there was even one that sold tacos!
But the one that caught our eyes and noses (because of the delicious aroma) was this one called Spuds Shack that sold rosti!
We just had dinner so we weren't that hungry for a big meal but this one seemed like a nice light snack so we decided to try it! Each rosti comes with a sunny side up and there are different flavours and sides you could get!
It was a little pricey but we rarely eat rostis so we just went for it anyway. We decided to get one of their best seller items!
After we ordered we waited for our queue number and since there was just one order ahead of us they prepared our order right in front of us on the spot!
I don't think I've ever seen a rosti prepared before but it seems pretty easy as long as you have the shredded potato. It looked a little burned when he cooked it though.
Thankfully the other side was fine and after a few minutes our order was ready! We took it to one of the empty benches where the neon sign was so we could sit and enjoy it!
We bought their Garlic Pepper Rosti and they definitely did not sleep on the pepper! The garlic taste was also fairly strong but it complemented the rosti so well! And the egg still had a little runny yolk so it gave the rosti some moisture too.
The rosti wasn't as crispy as we wanted on the inside but it was still nice and savoury and yummy! And it did whet our appetite a little bit even after we had dinner. I was kinda hungering for more but the other food was a little overpriced so we chilled for a bit before heading home.

It was a very nice night bazaar and a cool place to hang out so we actually went back multiple times but we strangely did not try the other stalls. Maybe next time?
