Happy New Year! We're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some new recipes I've been trying at home since I've been cooking a lot nowadays! Both because it's cheaper and also healthier to cook for yourself compared to eating out. While I have some regular recipes I do like to try new things and figured I'd share the new ones I've tried.
When we visited Thailand in March 2025, I bought back some curry pastes so I could cook them at home and one of the ones we bought was this Green Curry Paste that looked really good!
I'm not really sure if this is a reputable brand but it was pretty affordable so I'm guessing it was one of their household brands.
The instructions seemed pretty simple and I had the ingredients but I wanted to try it with pork instead since Green Curry typically comes with chicken. We had some frozen lean pork leftover so I thought it would be fitting.
Here are the ingredients I used:
- green curry paste
- 250g frozen lean pork slices
- 2 potatoes
- 1 chili slice
- frozen broccoli
Step 1: Defrost the frozen pork by soaking it in water.
Step 2: Cube the potatoes and slice the chili.
Step 3: Boil the potatoes and the broccoli until softened.
Step 4: Add in the curry paste to the boiled vegetables.
I kind of did things out of order just to see if there was a difference compared to the usual way. Normally you're supposed to drain the vegetables here and stir fry the meat before adding in the paste and stir frying that as well, before adding more water.
It seemed like unnecessary steps to me though, so I tried doing it this way instead.
Step 5: Once the curry paste has incorporated, add in the meat let it boil until cooked.
Step 6: Once the meat is cooked, add in the chilis and stir for a few minutes to make sure it's well combined.
Then it's done and ready to serve alongside a hot bowl of rice.
Unfortunately, I didn't have coconut milk on hand so I tried cooking this without it as well. But overall it still tasted okay. It definitely isn't like your typical Thai Green Curry though since it was lacking in the milk so the consistency was a bit off. But the meat was tender and the sauce itself had quite a lot flavour as well.
I think it would definitely be better if I had followed the instructions and ingredients to the letter though, but it was still a fun experiment. It still tasted good, but since then I definitely followed the recipe and the curry ended up tasting nicer.
