If you have ever visited any Indian sub-continent restaurants, then you will be familiar with Indian curry, Bangladeshi curry, and the golden color of these mouth-watering foods. Actually everywhere in Bangladesh, chicken curry is a must item with the staple food rice. Though curry powder is a typical type of combo where numerous masala or spices are mixed as a Bangladeshi I like all the powder separately such as the chili, turmeric, ginger, coriander, cumin, and garam masala which includes many spices altogether. The different recipe needs different ratios and so I like the separate one. But there are some specialized versions of these spices for different combos such as fish curry powder, meat masala powder, biriyani, and tahari combos with the proper ratios for a specific amount of raw materials which helps the people like me experts in cooking with confidence.
As I am living in an educational institute in China and I am often busy with my study so I don't have enough time to make everything perfect in a recipe and I have no kitchen facility in my room and I don't cook always actually! When I have some spare time and miss my native taste I start cooking instantly after I buy the raw materials and I prefer using the spices which are coming to China from my country. I can easily order those spices from the online shopping app quite fast and the delivery is always very smooth. Also, the raw materials are also available with everyday delivery to my institute. If I want to cook tomorrow I just need to place an order by night before 9/10 pm.
List of the ingredients with amount
Chicken drumstick 500 gm (4 pieces) - ($1.50)
Potato 300-400 gm (3/4 pieces medium) - ($0.10)
Onion 200-300 gm ( I prefer the smaller type) - ($0.30)
Garlic 50 gm (the paste is preferred) - ($0.20)
Cooking oil 3/4 Tablespoon (Ghee/Butter for more delicacy) - ($0.50)
Salt 2 Tablespoon (according to your taste)
Red Chilli powder 3 Tablespoon (I like more spicy)
Turmeric powder 1 Tablespoon
Ginger powder 1/2 Tablespoon
Meat masala 2/3 Tablespoon
Cumin powder 1 Tablespoon
Corriander powder 1 Tablespoon
All the available masala powder you like most
Step 1
First, clean the chicken and marinate it properly for an amazing taste. If the chicken is frozen then let it be normal for a time being. And if the muscle is too thick then cut through it for proper marination and properly boiled. Mix all the ingredients into 3 parts and mix 2 portions of those spices for marination for 1 to 3 hours. Then it will be ready for cooking. If it needed to cook instantly, then try to put more cut on the thick part for a proper taste combo into the meat.
Step 2
When your meat is put aside for marination, that time you can prepare your other stuff such as cleaning the onions and peeling the potatoes. After peeling them they should be washed properly and they are now ready for chopping. For potatoes, they must not be cut into very small pieces those should be a little bit bigger in size. But for onions, those can be cut in as small as possible or often there can be the blending option also that will thicken the soup of the curry and the taste will also increase dramatically! Same condition for garlic also. The onion and garlic can be blended together and that can be also used during the marination also for better taste. But I have skipped those due to make it as fast as possible.
These are chopped into pieces. The onion can be made into more smaller pieces but it will take more time!
Step 3: Starting of cooking
Final Step: Time for serving
And finally, the Traditional Indian sub-continent Chicken potato curry is ready to eat with some rice or some "Roti" a traditional thin pancake with RICE or WHEAT flour. As a Bangladeshi, we prefer rice with such as Chicken potato curry. But often in some occasions, we enjoy the "Roti", especially with rice flour as it is softer than the wheat one. It's a really amazing taste if you are not accustomed to such simply cooked foods then you have missed something in the world of food!
