I baked a nice walnut cake yesterday and I would like to give a shout out to as I made 2 trays 🤣 If you were next door, my friend, rest a sure a slice or two, in fact, the whole tl2nd tray, would be for you indeed 😁 I covered the cake with mocha frosting as I just love mocha flavor. I do have to mention though, I thought I have added enough coffee to make it mocha like, however, my 13 yo said it tastes like caramel instead 😅 In other words, brew stronger coffee than mine, friends!
Cake
115 g unsalted butter
1 1/2 c sugar
2 eggs
2 c flour
2 tsp BP
3/4 c milk
1 c walnut, chop
1 tsp vanilla essence
Frosting
115 g white choc chips
2 tbsp heavy cream (35%)
115 g unsalted butter (salted works yummily as well, to counter act the sweetness of bazillion icing sugar 🤣)
3 c icing sugar (see, bazillion!)
1 1/2 tbsp instant coffee, diluted in 2 tbsp hot boiling water
Grease and flour 2 square pans or a large rectangular pan, set aside
In a bowl, mix flour and BP, set aside
Mix milk with vanilla essence, set aside
Chop walnut, set aside
Cream sugar and butter until fluffy, then beat in eggs, one at a time
Stir in a little of flour mixture
Pour in a little milk mixture
Repeat step alternating one another, flour, milk, flour, milk, flour
Stir in walnut
Dump batter onto prepared pans, bake on preheated 350F for 23-30 mins
Cool in pans
While cake is cooling, let's make the cream!
In a bowl, mix chocolate chips with heavy cream, and warm to melt in microwave, for 30 secs at least
Cream icing sugar and butter, then cream in melted choc chips and coffee
Spread cream on cooled cake, slice and serve 😍
BTW! Even without the cream, the cake is good as is, just so you know 😊
