I like experimenting in the kitchen, adding a new ingredient, or mixing some random things, you need to get creative when you practice dumpster diving! And I do that, a lot. While here on the ecoTrain community is Simple Vegan Cooking On A Budget Month, I have my own Freegan August. I decided to spend no money on food for the entire month, and I'm pretty consistent with it.
After my last recipe for baba ghanoush, I've got for you another simple and cheap vegan spread (or dip if you will). Today I made 100% freegan guacamole. It takes around 25 minutes to cook it.
Ingredients:
6 ripe freegan avocados
1 big lemon or 2 limes
500g of champignons
black pepper
salt
turmeric
a little bit of oil
I find avocados in the dumpster quite often, it's really sad considering the fact, these are one of the most ecologically unsustainable plant foods. Avocado is also very often being produced by people working in conditions closest to slavery. Most of the avocados found in the dumpster are still good inside since they are trashed when they start to look ugly from the outside. Please, consider choosing ugly avocados in the shop and in general try to limit the consumption of these fruits.
At the beginning peel and cut champignons, it's very seldom to find good champignons in the trash, yesterday I was lucky, still, freegan mushrooms never are fresh, so I throw away legs and peel caps carefully. You can heat a little bit of your favorite oil now.
Now, when you have your shrooms on the stove we can start with avocados. Cut them in half and check if they are good, I picked 6 best fruits out of 8 I found. Any brownish or dry parts need to be cut out and thrown away, use spoon, after removing ugly parts take the rest of the fruit out to the bowl. You can keep the seeds, plant it, or dry and great, to use it as healthy supplementation.
Now add all the spices, please don't feel restrained by my choice of spices, this is the most basic one. Use whatever you like, experiment, get creative!
Lemon juice keeps guacamole from discoloring and gives acid taste, add some salt to balance it out.
When your champignons are getting golden it's a sign they are ready. Just put them together with avocados. You can experiment with different shrooms species to get another flavor.
It should look like this. Now it's time to use a blender, smooth your guacamole out to a degree acceptable by you.
Six avocados are a lot, so you can share it with others. Remember, keep it refrigerated. Enjoy!
