Anything on bread is generally a winner in our house. Though since plastic aware July we haven't been buying bread and this is my first attempt at making pita bread. I found a good 'mix-in what you want' (or have in the cupboard) burger ratio guide.
First I made the patties
- 2 cups tinned beetroot
- 1.5 cups cooked black beans
- 1 cup cooked cous cous
- 0.5 cup rolled oat
- plus seeds, spices and flavourings - 2 x garlic cloves, sesame seeds, black pepper, oregano, rosemary and chilli (I didn't bother with the onion from the recipe)
All into a blender until small chunks that hold together.
I love that this recipe shows all the different combinations you can use. Any bean, any grain, any dry binder. In the fridge and needs using 👌 or taking up pantry space 👌.
Then I used the 1/3 cup measurer to make my patties and chilled until needed (like a few hours). I decided that now I'd used the baking tray I would just try baking them instead of frying. I can report that 30-40 minutes at 175c fan-forced was perfect. We flipped them at about 20 minutes and took them out at 30 minutes, too hungry, could not wait.
Then onto the pita. I used this 'easiest' recipe using the dough 'sticks' on the blender, I slowly added about 1 cup of water to 250g of flour and 2g of yeast, which was MUCH more than the recipe said but it just wasn't coming together.
I'd warmed the oven and then popped the dough in to rise. It came out pretty nice and rolled into four significantly sized pitas. Again I didn't want to fry so I set them directly on the oven shelf for about 5 minutes on either side - they cooked much quicker than I thought, lovely and toasty and puffy.
