During this MRO in Malaysia, lots of businesses are being forced to think outside the box to sustain and survive through this period of uncertainty and difficulty. Small businesses like mine are virtually dying but I'm doing whatever I can to stay alive.
One of the things I started doing is deliveries. We started delivering our food when we started selling our food from our homes 8 years ago so we sorta know what we're doing however with it comes its own set of challenges.
I was opperating 2 days a week with mainly caterings but now since all our events and caterings are either cancelled, pending, or postponed, I'm now operating deliveries everyday since Tuesday and will go right up till Saturday. I'm not too sure about next week as we'll have to play by ear on what directives are given by the government and work around that.
I've also had to come up with new stuff on the menu to keep things fresh and provide other meals other than burgers. For this week, I did some pasta and this is an alfredo pasta which I call "Shanghai Chicken & Mushrooms".
I normally use shiitaki mushrooms for this recipe but the markets and marts weren't selling any fresh mushrooms this week. I suppose due to the lock down and MRO, so I got what they had which were canned mushrooms. It ain't all that bad as many Malaysians like this and are familiar with canned mushrooms.
My sauce is extremely simple. Starts off with onions and garlic sauteed in some oil then I add in butter and flour to make a roux. Cook the flour taste off and then I add in the sliced mushrooms and milk. Worchestershire sauce goes in with some dried oregano, salt, and black pepper and simmer it for about 5 minutes.
I pan-sear the chicken which I marinated with oil, smoked paprika, salt and pepper. Slice them up and serve them all with some simple spaghetti. For this week, I threw in some tater tots for everyone as their support and purchases are immensely important to us in this period of time.
