Because I still had a lot left from my pumpkin soup and I was sure that I will not eat it all I decided to make some Turkey Rice and use the Pumpkin for seasoning the Rice. It turned out pretty good and I definitely need to repeat cooking this kind of dish. It is a pretty easy dish but just needs a little bit of time since you need to cook the Pumpkin soup, the rice and the meat. But since the Pumpkin soup was already finished and I had a lot left from yesterday I used it for this dish.
First I cut the Turkey meat into smaller pices and cooked it for some seconds in the pan. The rice was cooked for 20 minutes in a pot in advance. As soon as the meat was coocked just right I added the rice and the pumpkin soup. Togehter with the mix I still cooked it for 15-20 minutes to get some really nice Pumpkin rice with meat. I added a bit of curry and some salt and pepper and I was good to go. It really tasted great and even today I still have a lot of if left for eating. Because 1 Pan full of food is a little bit much for 1 Person. I can really recommend it, especially witht he pumpkin soup and the curry it really tastes great.
