It's 6:30PM and still have not cooked anything for dinner. My husband's busy with his backyard garden while my high school son's sleep after his online classes. I am taking care of this little playful toodler who tails me everywhere I go and whatever I do.
We have not gone to the market to buy ingredients so I will just cook whatever I can see in the fridge.
There's a pork leg, potatoes and some premixed spices. Well have to create a new menu out of this! 😅
I have sliced the pork leg and bring them to boil to make it tender while I slice the potatoes, onion and garlic.
But this little rascal behind me is crying his throat out loud coz his hungry but only want his momma's boobies. Yep, he is breastfeed for 2 years now. I tried giving him formula milk but he'll just throw the bottle and break them. He won't sip a bit.
So I have to alternately cook and breastfeed him while setting the table. Ugh!
To hasten my cooking, while the pork is on boil to make it tender, in a different pan, I sauted the garlic and onion in margarine. Then I included the pork until it is brown.
Added the potatoes, pre mix spices and pork & beans. Put water and Simmer some more until the sauce is sticky.
I have to make sure that the dish will not be burnt and at the same time make certain that my toddler will not fall from the chairs or bump his head anywhere since he is full of energy!
Luckily, after less than an hour, my dish is cooked and the little one was not hurt. Dinner is ready!
