Ingredients
200 grams of palm sugar
200 grams of white bsmawang
15 red cayenne peppers
150 grams of red chili peppers
5 lime leaves
1 tablespoon of tamarind
1 tablespoon of salt
1 ounce of kencur (kaempferia galanga)
Lime zest to taste
Preparation Procedure
Fry the chopped garlic in hot oil until golden brown.
Then fry the chilies, lime leaves, and orange peel until wilted. Don't forget to drain everything first and set aside.
Then fry the peanuts with a little cooking oil. Fry until crispy, stirring constantly.
After frying the peanuts, chop them finely and add the chili peppers and other fried spices.
Since I didn't chop the sugar, I ground it again using my mother's traditional mortar and pestle.
I added ground tamarind salt until it was perfectly smooth.
The result will form clumps. Shape them into squares or circles, then wrap each portion in bubble wrap. This makes it easier when making pecel later—just take them out and add hot water.
Results
The results are perfect. I am very happy to be able to make special peanut sauce to stock up for Ramadan. My husband loves pecal, so making dishes like this for him makes him smile with happiness. Later, when it's time to serve, I can do so quickly and easily.
All you have to do is boil all the vegetables you want to mix and prepare the peanut sauce, then mix it with water. Everything tastes delicious. This sauce can also be used for salad; it's already very tasty with just fresh cucumber. Trust me, dishes like this look simple, but they are a quick way to serve a meal. In Indonesia, pecal seasoning like this is often stocked in large quantities because it has a very long shelf life, lasting 1 to 2 months in the refrigerator
