I had sweet potatoes and was confused about what to cook, so I thought of my husband, who really likes creamy, spicy dishes. So I tried this recipe, which is very simple and one of the best recipes for my husband and I's dinner menu.
Sweet Potato Coconut Milk Soup
Sweet potato coconut milk soup is a special dish made from sweet potatoes with a spicy and creamy sauce. At first glance, it looks similar to curry soup, but this dish has an extraordinary flavor. This dish is a side dish that is enjoyed with white rice, so I cooked the soup according to my husband's taste.

1 sweet potato weighing 70 grams
100 ml thick coconut milk
2 bay leaves
Spice Paste
2 cloves of shallots
2 cloves of garlic
1 candlenut
1 cm turmeric
3 cayenne peppers
2 dried red chilies
Cooking Procedure
Cut the sweet potatoes into thin slices. According to your preference, I don't want them too big.
Then fry until golden brown in hot oil.
Blend the spices until slightly coarse with a little water.
Then sauté with a little cooking oil and add bay leaves.
Sauté until boiling and add coconut milk. Wait until it boils, then add the fried sweet potatoes and cook briefly. Don't forget to season with a quarter teaspoon of salt, then adjust the taste.
Result
Served in a bowl, sweet potato coconut milk soup has a fantastic taste. It is savory, spicy, and has a slight natural sweetness from the sweet potatoes.
The texture is very creamy, and anyone would love it. Especially those of you who are used to making curry dishes like this, but you will definitely feel how delicious it is.
However, what initially made me skeptical was that sweet potatoes, when cooked into a savory and spicy dish, are actually a perfect match. Especially when made into a creamy, savory soup like this, it's incredibly simple. What I like most is that sweet potatoes are excellent when made into a creamy coconut milk soup. Usually, I make them into a sweet dessert called kolak. But as a main dish, it turns out to be incredibly delicious. My husband highly recommends this dish for you to serve anytime.
