I just have to share my latest kitchen experiment with you: vegan cherry chia pudding. It's one of those dishes that's both delicious and packed with goodness. Seriously, it’s like having dessert for breakfast but without any guilt! I used sweet-sour cherries for the pudding itself and decorated it with those gorgeous big cherries that are much more sweet. It looks as good as it tastes!
The best part? It’s super simple to make. I started with a smoothie base – just blended some cherries and a banana together. The banana adds just the right amount of sweetness, so there's no need for any extra sweeteners. The cherry flavor really shines through!
Chia seeds are the magic ingredient here. They’re tiny but mighty, loaded with omega-3s and other fatty acids that are great for your health. When you mix them with the cherry-banana smoothie and let it sit overnight, they absorb the liquid and turn into this thick, creamy pudding. It's like a mini science experiment that you get to eat!
This pudding is perfect for a quick breakfast on busy mornings. Just prep it the night before, and you have a ready-to-go meal waiting for you when you wake up. It’s also a fantastic snack or dessert for any time of day. You get the rich flavor of the cherries, the smooth texture of the pudding, and a nice little crunch from the chia seeds.
And can we talk about the presentation for a second? Those big cherries on top not only add a pop of color but also make the pudding look so fancy. It’s like something you’d get at a trendy café, but you made it yourself at home.
So, if you're looking for a healthy, tasty treat that's a breeze to whip up, give this vegan cherry chia pudding a try. It's got everything – flavor, nutrition, and ease. Enjoy!
You will need:
● 140 g. cherries (approx. 100 g. cherries after removing the pits)
● 1 ripe banana
● 300 ml. unsweetened plant-based milk (oat milk was used in the recipe)
● 50 g. chia seeds
Preparation
- Remove the pits from the cherries. This can be done with a special pitting tool or, if you don't have one, with a simple wooden skewer or, if the cherries are larger, with a straw, etc.
- Place the banana, pitted cherries and milk in a bowl. You can add sweetener, but if the banana is well ripened you won't need it. Blend everything with a hand or other blender.
- Mix the puree with the chia seeds and refrigerate overnight. You can also stir after a couple of hours.
- The chia pudding can be eaten on its own, with more pitted cherries or other berries added. I put those bigger cherries at the bottom, put chia pudding on them and then added some white yoghurt on top together with more big cherries. It looked amazing!
