Have you heard of aquafaba before?
It is a quite commonly used product in the plant-based food context. Usually it refers to a leftover liquid from the canned chickpeas and in most cases it is suitable for replacing eggs. 🐣
I usually use it for vegan mayo (Recipe here) but it is very useful for baking so I tried to put it in pancakes this time 🥞
Pancakes are not as fluffy because I used banana but feel free to replace it with more sugar or add more flour 👩🍳
You will need (for 10 small/medium pancakes)
- 75 g. wheat flour
- 0.5 teaspoon baking powder
- 50 ml. aquafaba (liquid from canned chickpeas)
- 1 small ripe banana
- 2 tablespoons lemon juice
- 90 ml. soy or other plant-based milk
- 1 tablespoon sugar
- 1 teaspoon coconut oil (for baking)
Instructions:
- Whisk the aquafaba to a froth (whisk for about a couple of minutes), then add lemon juice, milk and mix.
- Add mashed (with a fork) banana to the mixture.
- Add flour, baking powder, sugar to the mixture. Mix until smooth.
- Heat a pan with coconut oil, add 1-2 tablespoons of dough for each pancake and bake on both sides until lightly browned. You can add oil in case the pancakes stick to the pan.
