You will need:
For a small container of pesto
● 50 g. fresh rucola (arugula) leaves
● 6 tablespoons olive oil
● 40 g. cashews
● 2 garlic cloves
● 2 tablespoons fresh lemon juice
● 4 tablespoons nutritional yeast (15 g.)
● About 0.5 teaspoon salt
Preparation
- Cover the cashews with hot boiling water and soak for at least 10-15 minutes.
- Put all the ingredients - rucola, oil, slightly chopped garlic, lemon juice, nutritional yeast, salt and cashews (after draining off the water) in a container for blending.
- Blend everything with a hand or other blender until smooth.
