Today I bring you another recipe for a quick, easy to make and enjoyable meal of rice cake with some pumpkin leaves sauce you will like to try for dinner. I made some delicious rice cake and vegetable pumpkin leaves sauce for dinner which is so nutritious and I want you not to be left out of this vegan richness
The truth is that I love vegetables generally, and love making and inculcating them in meals for the family, so everyone will get to enjoy healthy foods. We can choose to make our vegetables in various ways we love and enjoy them.
This recipe of rice cake with pumpkin leaves sauce is made with boiled rice which is a recipe of whole grain of carbohydrate meal with just little salt to taste when we cook rice which needs sorts of vegetables to make it a complete healthy meal, and Pumpkin leaves in the other hand is a leaf known as fluted pumpkin, with a botanical name Telfairia occidentalis . This leaf is a very rich vegetable and can be prepared in various ways with ingredients of our choice.
Let's see the ingredients l have used with this leaf to prepare the rice cake with pumpkin leaves recipe.
INGREDIENTS :
Bunch of Pumpkin Leaves
Few fresh Tomatoes
Red Hot chilli
Onions for flavor
1 Soy Cube
Salt to taste
Oil
Extra Ingredients :
Boiled Rice
Steps For Preparation )
- To begin the preparation of this recipe, I plucked, washed the pumpkin thoroughly before disinfecting it of bacteria and sliced it.
- Washed also the tomatoes, onions and the red hot chili then sliced and diced them.
- I went ahead to blend the tomatoes, onions and red chilli as to make it puree which will boost the flavor of the vegetable sauce.
- And I went on to fry this sauce by heating up the pan, add little vegetable oil, pinch of salt and add the blended puree. I allowed it to fry for about 5 minutes , then I added thyme, curry, nutmeg and the soy cube. I stir and allow to fry for a while.
- Added the sliced pumpkin leaves. Stired the pumpkin leaves and the spicues into the puree, allow to fry for 2 - 3 minutes to avoid over cooking it as half cooked vegetables has more nutrient. I Set it aside.
- Then I set the rice to cook, brought out this potion, mashed it into rice batter and cupped it into a rice cake.
- The delicious rice cake with pumpkin leaves is a meal you and your family will love. It's full of nutrients and so healthy too to be incorporated in our weekly meal roaster.
