We are blessed, in my opinion, to have strawberries from Early June to late October 🍓. And our strawberries are literally delicious. I tried many types, from many people, but ours are something else. ❤️
I'm not subjective, and ofc I'm happy that they're grown by us, cultivated in our small garden. But its not about that.
Its about the taste and consistency. They are juicy but firm in the exterior. Perfect! 🍓🍓
Anyways, all summer long we have strawberries. And Caleb is the happiest.
I am excited too because I love cheescake. But I'm lazy with making a classic Cheesecake 😁😆.
Also, I enjoy a fresh cheesecake. Fresh coming from fresh strawberries and only a handful of ingredients, no heat needed and ready in 10 minutes.
Good part, everything in my family agrees. 💯
One of these days, we had a small celebration with the family.
Nobody did anything about cakes or food. We would just gather together and have a little time together.
So I was thinking to make some mini cheesecakes, as I knew everyone will enjoy them. And plus, we had so many strawberries! 🍓🍓🍓
I did this "recipe" several times. I know it doesnt leave room for mistakes. No matter what you'll use, its fine.
This is so easy to make, that the worm recipe is too much to say. 😁
Here are the ingredients:
- digestive biscuits (graham crackers)
- strawberries
- creamcheese
- heavy cream
- sugar
- mascarpone cheese (optional)
- vanilla bean (optional)
You can replace strawberries with blackberries, blueberries, raspberries. I wonder if you can use pinapple. 🍍🤔
Instructions are simple.
At first, prep the strawberries and the crackers.
As for the cream and proportions, you should have something about 1/3 of each three dairy products: cream cheese, heavy cream and mascarpone.
But this is soo basic. You can have only cream cheese and heavy cream or mascarpone and heavy cream (this will bee a little lighter). Or you can combine them as you have at home. I often do that. I mix all leftovers and do a mini cheesecake jar.
All right, so! MIX these three with sugar (add the amount you consider, it depends in your taste). Also dont forget that graham crackers are often sweetened. I dont use much sugar, just the right amount to have a mild delicious flavour of something sweet and refreshing.
Start with a layer of crackers, then cream and finish with strawberries on top. Or whatever. I dont really care which layer is first. 🍓🍓
You can repeat the layers if you're using tall jars. It looks better this way.
I usually put them in jars and keep them in the fridge.
This time I assembled them directly to the glass bowls because we would eat them immediately.
Caleb helped me many times with this recipe.
Thats why I'm suggesting you to try it with kids.
They can have a little cooking time with mom without doing a complete mess in the kitchen.
Also, the ingredients are regular. They're not the healthiest, sugar included, but they're not full of additives. You have plain basic ingredients to create an easy dessert for the little ones.
And actually, you can replace cream with full fat coconut cream. 🥥
There are children that doesnt love fruits because they are dependent on sugar unhealthy products.
Maybe with this recipe, they will want to try it and realize fruits can be tasty. 🍓
You can talk a little about the importance of healthy food and why we should cook our own food and desserts every time its possible.

For us, this recipe is pure gold in summer. It saves me time from making other desserts and it sattisfies our taste for sweets.
