Hello everyone hope you all are doing well. Today I will be sharing the recipe of rasmalai with homemade paneer. It is very easy to make and very less time consuming recipe. It is very delicious to eat. So without wasting our time lets move on to the ingredients.
Ingredients:
-Full fat milk- 1 ltr
-Lemon juice- 3 tbsp
-Corn flour- 1 tsp
For rabri
-Milk- 3 cups
-Condensed milk- 3/4 cup
-Almonds- 10
-Pistachios- 10
-Saffron- 1 pinch
-Cardamom powder- 1/2 tsp
For sugar syrup
-Water- 1 1/4 cups
-Sugar- 1 cup
Method:
-For making rasmalai balls we are firstly going to prepare paneer. For this i have transfered the milk into a vessel and then wait for a boil to come at high flame. Then add little lemon juices at a time by continuously stirring it. After the milk starts getting destroy turn the flame off and strain it. With this our paneer is ready
-Now again take milk into a vessel and wait for a boil to come. Then add saffrons to it. With this also add crushed almonds and pista to it. With this we are going to add condensed milk. If you dont have condensed milk then you can also use sugar
-Cook the milk in medium flame in such a way that one cup of the milk gets reduced and 2 cups remains in the vessel
-Turn the flame off and add cardamom powder to it. Our rabri is ready. Keep it aside
-Now mash the paneer with your hands. Dont keep the paneer for more than 30 mins otherwise it will get tight. Then add cornflour to it. This will help the paneer to get bind nicely. Now mash the paneer very nicely with your palm and make it soft
-Apply some oil on your palm and take a small portion and flat it in you palm
-Now we are going to prepare sugar syrup for this. So for that add water into a vessel. After a boil comes into the water we are going to add dugar to it. Melt the sugar in high flame. Then add the paneer balls to it. Keep in mind the flame should be in high otherwise the balls will get melt. Cover the lid and cook it for 18-20 mins in high flame
-Turn the flame off and let it get cool down. Then add them into the rabri and yeah its ready to serve
