I know it's only the beginning of July, but I'm slowly starting to get my itch for pumpkin everything again! Instead of waiting until October to make these, I'll be whipping up a batch again for tomorrow mornings breakfast 💛🎃
I love this recipe because it's super simple to make and won't break your calorie budget! I even find it better to now make my own pancakes with the ingredients below, versus a box mix. The recipe is gluten free and I promise you wouldn't even know ☺️
Here's what you'll need:
🔹 1/2 scoop protein powder - I used Cellucor whipped vanilla protein powder
🔹 1/4 cup egg whites - I used muscle egg pumpkin spice flavor
🔹 3/4 cup gluten free oats
🔹 1 pinch baking powder
🔹 2-3 tablespoons canned pumpkin
🔹 1 pinch of pumpkin pie spice
Directions
🔹Mix all ingredients in Magic Bullet until a smooth consistency is reached.
🔹Spray pan with non-stick cooking spray (I used a coconut oil cooking spray)
🔹 Pour batter onto pan and make pancakes on medium-high heat
🔹Top with a sugar free pancake syrup and enjoy!
These taste exactly like a warm pumpkin pie!
You can also make these ahead of time and have them for a mid-day meal. They are even great if eaten at room temperature.
