Steemit Iron Chef 2018 Act 01 Round 03: SALMON AND CUCUMBER TARTARE WITH GUACAMOLE

My entry for Steemit Iron Chef 2018 Act 01 Round 03.
INGREDIENTS:
3 cucumbers
100 g of smoked salmon
150 g of cherry tomatoes
1 tablespoon of red onion
1 tablespoon of capers
1 garlic clove
1 avocado
150 g of Greek yogurt
1 lemon
a slice of bread
1 egg
4 tablespoons of olive oil
salt
pepper
parsley
basil
Ziest 1 lemon and juice it. Cut the salmon on small pieces and add lemon ziest , half of a lemon juice, 1 tablespoon of olive oil, a pinch of salt and pepper. Wrap a round shape model of diameter 8 cm into the stretch foil. Fill it with salmon mixture and press it with a spoon. Put it in a fridge for one hour.
Cut 2 cucumbers and 150 g of cherry tomatoes on small pieces. Chop 1 tablespoon of red onion, 1 tablespoon of capers and basil. Mix all the ingredients in a bowl and add 1 tablespoon of olive oil, a pinch of salt and pepper. Wrap a round shape model of diameter 8 cm into the stretch foil and fill it with a vegetable mixture. Put it in a fridge for 1 hour.
Put 1 avocado, 1 garlic clove, 2 tablespoons of fresh parsley, 1 tablespoon of olive oil in a blender and blend it. Add 150 g of Greek yogurt, juice of half lemon, a pinch of salt and pepper and blend some more.
Wrap a round shape model of diameter 8 cm into the stretch foil and fill it with avocado mixture.
Cut a piece of bread in round shape of diameter 8 cm. Mix 1 egg with a pinch of salt and deep the bread in it. Heat 1 tablespoon of olive oil in a pan and roast it on both sides. Cool it down.
Cut 1 cucumber on slices and put it on a serving plate. Save 1 slice of cucumber for the decoration on the top of a dish.
Take guacamole paste out of the model and put on a serving plate. Add a piece of bread.
Take vegetable mixture out of the model and put it on a bread piece.
Take the salmon out of the model and put on the top of the dish.
Make a decoration out of a cucumber slice and a twig of basil.
