Last night was the Super Bowl and our tradition is to make some finger food at home for this annual event. I know the traditional Super Bowl snacks are mostly nacho, guacamole, wings, chili, dips or pizza.
However, I wanted to make something different just for the sake of it. So, I made this Bacon Wrapped Potato ‘Sandwich’ with Broccoli & Cheese.
Again, the theme this week is 4 ingredients or less. And for this 'sandwich', the following ingredients were used:
- potatoes, bacon, broccoli and cheese.
The steps are quite simple as well:
- peel and remove the inside of the potato
- wrap the bacon around the potato and baked at 400 for 45 minutes
- stuff cheese, broccoli and more cheese inside the potato and baked for another 5-10 minutes
The result is this crispy and tasty snack. When you cut into this sandwich, the broccoli & the cheese just burst out like a volcano. While I tried to capture this motion by camera, the pic doesn't do it justice.
Guess, you guys will just have to make it and see it for yourself, lol.
This is my last entry of Week #26. Another fun week and I enjoyed making all my sandwiches.
As of today, I have 79 sandwiches under my belt. And, I am looking forward to reaching my personal goal of 100 sandwiches before my baby arrives in May. And, it is getting closer and closer!!!!
